Tapioca Starch

What is Native Tapioca Starch?

Tapioca starch is a fine, white powder derived from the root of the cassava plant. This versatile, gluten-free ingredient is widely used in cooking and baking due to its excellent thickening, binding, and stabilizing properties. Tapioca starch is commonly used to thicken soups, sauces, and gravies, providing a smooth and glossy finish. It is also essential for enhancing the texture and moisture of gluten-free baked goods, making it a popular choice for gluten-free recipes. Additionally, tapioca starch is a key ingredient in making bubble tea pearls, giving them their signature chewy texture.

Harvesting and Processing Methods

Tapioca starch is derived from the root of the cassava plant, which is typically harvested 8-12 months after planting. The harvesting process involves carefully digging up the cassava roots to prevent damage. Once harvested, the roots are transported to processing facilities where they undergo several steps to extract the starch.

This pulp is mixed with water and strained to separate the components from the starch.
